New Dayton Coffee Shop Draws Lines Around the Block
The Knapp family converted a historic gas station in Kentucky into a specialty café, betting on community over speed.

Isabelle, Asa, and Elijah Knapp now wait outside their own shop as often as their customers do. Lines for Elliott Coffee regularly stretch around the block in Dayton, Kentucky, a sign of the demand the family hoped to build when they opened the café in 2024.
The shop occupies a small building that once served as a gas station and mechanic shop. Located on a bend in the Ohio River, the structure is about 10 minutes from downtown Cincinnati. The Knapps transformed this century-old site into a gathering spot for the neighborhood.
Elijah Knapp left a career in software to launch the business. His wife worked as a nurse during the start-up phase. Shortly after signing the lease for the property, the couple learned they were expecting a child. This timing made the venture's success a matter of financial urgency for the family.
The menu features specialty coffees from roasters in Edinburgh, Los Angeles, and Central America. Knapp described the sourcing process as a way to honor the labor involved in growing, processing, and roasting the beans. He said the goal is not to compete but to respect the product.
"I think that the idea of, like, the small-town American community has mostly been lost," Knapp said. "Everyone longs for this idea of something that feels unique to their area."
The founders aim to create a space where neighbors connect rather than just grab a drink and leave. Knapp noted that the experience includes the morning routine of walking a dog and stopping by the shop. He said waiting in line has become part of that social experience for many patrons.
"We've been so fortunate that people have shown up in droves to support what we're doing," Knapp said. He acknowledged that the service takes longer and costs more than a typical coffee stop, but he believes customers leave satisfied with the experience.
